Sophia's Cherry Chocolate Chip Cookies


[One day Aaron, Sophia's 16 year old son, comes in from baseball practice. He snags a few fresh baked cookies from the counter. These are the cookies.]

1/2 cup plus 6 tablespoons of BUTTER
3/4 cup firmly packed BROWN SUGAR
ready for sharing
1/2 cup granulated SUGAR
2 EGGS
1 teaspoon VANILLA

1-1/2 cups all-purpose FLOUR
1 teaspoon BAKING SODA
1/2 teaspoon SALT
3 cups rolled OATS (uncooked)

1 cup semi-sweet chocolate chips
2/3 cup dried cherries, diced

A note about ingredients: I like to use real butter, C&H dark brown sugar, King Arthur flour, Kirkland chocolate chips, and Quaker Old Fashioned Oats - these high quality items result in a superior tasting product

In a large bowl, beat butter until creamy
Add sugars and beat until fluffy
Add eggs and vanilla, beat well.

In another bowl; combine the flour, baking soda, and salt. Mix well.
Combine with the butter-sugar mixture
Stir in the oats, chocolate chips, and cherries

Heat oven to 350F
Line cookie sheets with parchment paper or a silicon mat

Drop dough by rounded tablespoonfuls onto lined cookie sheet.
[I like to use a cookie scoop and then flatten the balls of dough with the back of a tablespoon]

Bake ONE tray at a time in the center of the oven for NINE minutes
Cool on racks
Store tightly covered
